Michel and Sebastian Bras are two of the most important chefs of south west France. Eating at the restaurant Le Suquet near Laguiole will be an experience of a life time. You will be witnessing a father and son passion for food that is all locally sourced. Up on the moors of Aubrac one is spoilt for choice with the meats and vegetables, flowers and grasses. You will be regaled with treasures you would never have dreamed of eating and in such an extraordinary setting.
The ancient tradition of blessing the cows on their way up the hill for summer grazing on the high pastures goes back centuries. This for me is the joy of this week to be able to mix such an ancient tradition with the modernism of Michelin star cooking. The Transhumance as it is called takes place on the Sunday before we start walking the moors. The cows are bedecked with flowers.
And at this time of year we get some amazing quantity of flowers. Tiny deep blue gentians and purple and white orchids are in abundance after the snow has melted. White narcissi can carpet certain pastures. A delight to see in this extraordinary landscape.
And more flowers! The most prominent here are the fragrant orchids.
This has to be the strangest title for an itinerary in The Walking Party agenda but it is truly one of the most interesting and definitely the most delicious! James hosts this trip. Hotels, restaurants and visits have been carefully selected to reveal the character and colour of Aubrac and the moors around. All meals are included and lunch will be a mix of picnics and restaurants.

CHEZ CAMILLOU
A three star hotel in the heart of Aumont Aubrac. We stay here as this is only a few feet away from Cyril Attrazic’s two star Michelin restaurant. The bedrooms are modern and comfortable and all have bathrooms en suite. Wifi.
LA COLONIE
Situated in Aubrac a village of six houses, on the moors, it reminds me of a New York warehouse appartment. The bedrooms are large and spacious. Simple but comfortable beds. The bedrooms are floor-boarded and full of light. Bathrooms are spacious too and en suite. Downstairs is a lovely open plan polished concrete floor seating and eating area with old worn leather armchairs and sofas. Wifi normally good.
HOTEL L’ALCHIMY
A stylish four star hotel situated in the heart of the historic centre of the city of Albi. All rooms have bathrooms en suite. This is a beautiful hotel and a lovely way to end your extraordinary week!
Grade Of Walking
The moors where we are rolling are beautiful soft and undulating with expansive views and ancient beech woods. Hardly any hills! There is one morning descent but it is not too steep just a continual gradual descent of two and a half hours. The paths are sure footed and you could do this week in good quality trainers. Of course it could rain and drying facilities would mean your boots stuffed with newspaper and left by the wood burning stove over night.FOOD & WINE
Cyril Attrazic will be showing us on our first night just why he now has two Michelin stars (gained earlier this year) having gained his first in 2012. It is a modern restaurant in a town setting. After dinner though there is really not far to travel as we will stay in their hotel next door.
And for the final pièce de la resistance will be lunch chez Bras at Le Suquet. An extraordinary building with outstanding views and exquisite food. Before Sebastian Bras decided to leave the Michelin categorisation he had three stars. There was quite a lot of publcity regarding his desire to leave but he was allowed to in the end. The Michelin syndicate then popped him back on the next year without him knowing and deducting a star! So we begin to understand the Michelin system a little better now!
